Olive Oil Recipe: “The Only Marinade You Will Ever Need”

If grilling master Steven Raichlen was stranded on a desert island and had only one marinade he could cook with, he’d pick one created from extra virgin oil and freshly squeezed lemon juice.

Appropriately enough, Raichlen dubs this marinade: “The Only Marinade You Will Ever Need.”

Raichlen – author of the best-selling Barbecue! Bible (Workman Publishing Co., 2008) and host of Primal Grill on PBS – says his marinade “instantly transports you to the Mediterranean.” It’s “redolent with garlic, piquant with fresh lemon juice, and fragrant with extra virgin olive oil.” Coarsely chopped herbs provide an added flavor boost.

Better yet, you can play around with this marinade and come up with your own creation. “It’s very customizable,” Raichlen told us recently by cell phone from the Phoenix airport while on yet another of his globe-trotting trips. “You can use it for everything.”

That includes poultry, seafood, beef, veal, pork, lamb, and vegetables.

Raichlen advises that you can use it as both a marinade and a basting sauce. If marinating poultry, meat, or seafood, simply set aside a portion for basting.

One more item: I want to mention that California Olive Ranch extra virgin olive oil was featured on NBC’s Today Show today, July 5th. Food guru Jack Bishop of Cook’s Illustrated magazine was on hand to talk about how to taste and select olive oil.
